4 cloves of fresh garlic;
1/2 large Sweet onion;
Sauté those in a fry pan/omelet until they’re "al dente" with a splash of Olive Oil and salt for taste;
Separate the egg whites of 8 eggs from the yolks, 2 people portions, in a bowl whisky them a little bit. Pour it on the pan with the onions and garlic and sprinkle some oregano on it. Let the eggs cook until it is all white.
On your cutting board, cut parsley and scallions (I suggest a cup), to cover the entire frittata. Pout this mix on top of the frittata and put on you broiler for 3-4 minutes until it is Golden.
Serve it on top of a English muffin with a some carrots cuted in julienne style and kefir Cheese as you'd use butter.
