That was dinner last night!

Becker's Chicken Salad


Take any chicken left over, if possible shred it in small pieces, and reserve it. How about the amount?? You chose it….

In a sauce pan put 2 tbs of olive oil and Garlic (3-4 large cloves, for garlic lovers, of course, if you are not take some off) and sauté them until the garlic is all soft and the chicken is browned almost crunch.

Take this mix to a mixing bowl, add raw Julienne carrots, cranberries, olives and red onions in a proportional quantity  or if you like a lot of one of these ingredients, don’t be shy, this is just a suggestion!

Mix all the above with plain yogurt and fine sliced scallions and raw zucchinis. Salt and peppers as you like!

Serve with sauté spinach and Garbanzo beans! Enjoy it…We did..
